Description

This comforting slow-cooked soup is the ultimate weeknight meal for busy families. By combining savory turkey or chicken sausage with pillowy cheese-filled tortellini in a rich, creamy tomato-based broth, you get a restaurant-quality dinner with minimal effort. The addition of cream cheese creates a velvety, luxurious texture, while the slow cooker does all the work. It is a hearty, nourishing bowl of goodness that feels like a warm hug, perfect for those who want a delicious, fuss-free meal without the stress of constant monitoring.

Ingredients

Scale

1 lb turkey or chicken-based Italian sausage (browned, drained, and chopped)
1 can (15 oz) Italian-style diced tomatoes
4 cups vegetable or chicken broth (approx. 32 oz)
8 ounces cream cheese (cut into cubes)
1 bag (20 oz) frozen cheese tortellini
3–4 cups fresh baby spinach
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp Italian seasoning
0.5 tbsp black pepper

Instructions

Brown the turkey or chicken sausage in a skillet over medium heat until fully cooked; drain the excess fat and chop into bite-sized pieces.
Place the cooked sausage, diced tomatoes with juices, broth, garlic powder, onion powder, Italian seasoning, and black pepper into the crockpot.
Stir well to combine and cook on low for 3-4 hours or on high for 1.5-2 hours.
About 30 minutes before serving, stir in the cubed cream cheese until melted and smooth.
Add the frozen tortellini and fresh baby spinach to the pot.
Cover and cook for an additional 20-30 minutes, or until the tortellini are tender and the spinach has wilted.
Serve hot in bowls.

Notes

You can add a second can of diced tomatoes if you prefer a heartier tomato flavor. For a thinner soup, add an extra cup of broth. Store leftovers in an airtight container in the refrigerator for up to 3 days; note that the pasta may absorb some of the liquid upon reheating.
