Ingredients
1 large onion, diced
1 pound turkey or beef bacon, diced
1 pound lean ground beef or turkey
3 cloves garlic, minced
1 cup carrots, sliced into rounds
5 cups cabbage, chopped into bite-sized pieces
1 (28 oz) can fire-roasted diced tomatoes
1 (16 oz) can tomato sauce
6 to 8 cups beef broth
3/4 cup long-grain rice, uncooked
1 tablespoon Worcestershire sauce
1 1/2 teaspoon smoked paprika
3/4 teaspoon dried thyme
2 tablespoons fresh parsley
1/2 teaspoon marjoram
2 bay leaves
Salt and black pepper to taste
Instructions
In a large skillet, cook the diced turkey or beef bacon and onions over medium-high heat until the bacon is crispy and onions are translucent.
Add the ground beef or turkey to the skillet and cook until browned, breaking it apart with a spoon.
Stir in the minced garlic and cook for an additional minute until fragrant.
Transfer the meat and onion mixture into the slow cooker.
Add the carrots, chopped cabbage, fire-roasted tomatoes, tomato sauce, beef broth, Worcestershire sauce, smoked paprika, thyme, marjoram, and bay leaves.
Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
Stir in the uncooked rice during the last hour of cooking to ensure it reaches the perfect texture.
Remove the bay leaves, garnish with fresh parsley, and season with salt and pepper before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. The rice will continue to absorb liquid, so you may need to add a splash of beef broth when reheating. This soup is freezer-friendly for up to 3 months.
