Ingredients
12 oz gluten-free spaghetti
2 cups cherry tomatoes, halved
3 garlic cloves, minced
1/4 cup olive oil
1/2 cup fresh basil, chopped
1/4 cup gluten-free breadcrumbs, toasted
1–2 tbsp balsamic glaze (optional, alcohol-free)
1/2 tsp salt
Freshly ground black pepper to taste
Instructions
Bring a large pot of salted water to a boil
Cook gluten-free spaghetti according to package instructions until al dente
While pasta cooks, toss cherry tomatoes, garlic, and 2 tbsp olive oil on a baking sheet
Roast at 400°F (200°C) for 15-20 minutes until tomatoes burst and caramelize
Once roasted, add tomatoes, basil, 1 tbsp olive oil, salt, and pepper to the cooked pasta
Toss to combine and adjust seasoning as needed
Transfer to serving bowls, top with toasted breadcrumbs and a drizzle of balsamic glaze
