Ingredients
- 1 small green cabbage, chopped
- 1 large onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 can diced tomatoes
- 6 cups vegetable broth or chicken broth
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 tablespoon olive oil
- Optional: 1 small potato, peeled and diced
Instructions
1. Prepare the vegetables: Chop the cabbage into small strips. Dice the onion, slice the carrots and celery, and mince the garlic. If using potatoes, peel and dice them as well.
2. In a large soup pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Cook for 5-6 minutes, stirring frequently, until the vegetables begin to soften.
3. Stir in the garlic, thyme, and basil. Cook for another minute until fragrant.
4. Add the chopped cabbage, diced tomatoes with their juice, and vegetable broth to the pot. Stir well.
5. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the cabbage and all the vegetables are tender.
6. Add salt and pepper. Taste and adjust the seasoning as needed.
7. Serve the soup hot with crusty bread or saltine crackers, if desired.
