Easily customizable for the whole family, these bowls are perfect for meal prepping and provide a comforting, balanced dinner that leaves you feeling energized.

Ingredients

Scale

1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons extra virgin olive oil, divided
1 teaspoon garlic powder
1 teaspoon paprika
0.5 teaspoon kosher salt
0.25 teaspoon black pepper
0.25 cup buffalo sauce
1 squeeze fresh lemon juice
2 cups cooked white or brown rice
1 cup plain Greek yogurt
1 tablespoon mayonnaise
2 tablespoons lemon juice
1 teaspoon dried dill
1 teaspoon dried chives
1 teaspoon dried parsley

Instructions

In a small bowl, whisk together Greek yogurt, mayonnaise, 2 tablespoons lemon juice, dill, chives, and parsley to make the ranch dressing; set aside in the refrigerator.
Season the chicken pieces with garlic powder, paprika, salt, and black pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and sear until golden brown and cooked through, about 6-8 minutes.
Reduce heat to low and stir in the buffalo sauce and a squeeze of fresh lemon juice until the chicken is evenly coated.
Divide the cooked rice into serving bowls.
Top each bowl with the buffalo chicken.
Drizzle generously with the homemade Greek yogurt ranch dressing and serve warm.

Notes

Store chicken, rice, and ranch dressing in separate airtight containers in the refrigerator for up to 4 days. You can easily add sautéed bell peppers, cucumbers, or celery sticks to the bowls for extra crunch and nutrition. For a lower-carb option, swap the rice for cauliflower rice.
