Ingredients
- 1 lb lean ground beef
- 1 medium onion, chopped
- 8 oz fresh mushrooms, sliced
- 1 cup low-sodium beef broth
- 2 packets (0.87 oz each) brown gravy mix
- 2 cups frozen mixed vegetables
- 1 cup shredded cheddar cheese
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a large skillet over medium heat, brown the ground beef and onions for about 8–10 minutes until fully cooked; drain excess grease.
3. Stir in sliced mushrooms and cook for an additional 5 minutes until tender.
4. Add beef broth and brown gravy mix; simmer for 3 minutes until slightly thickened.
5. Mix in frozen vegetables and warm through for about 2 minutes.
6. Transfer to a greased baking dish, top with shredded cheddar cheese, and bake for 25–30 minutes until cheese is melted and bubbly.
Notes
You can substitute ground turkey or chicken for a lighter version.
For extra flavor, sprinkle a bit of garlic powder or Worcestershire sauce into the meat while cooking.
