2 tablespoons butter
1 small yellow onion, diced
1 jalapeno pepper, diced
3 cloves garlic, minced
1 tablespoon tomato paste
15 ounces canned corn, drained
10 ounces canned Rotel diced tomatoes with green chilies, undrained
15 ounces black beans, drained and rinsed
5 cups chicken broth, halal
3 cups cooked chicken, shredded
4 ounces cream cheese, softened
1 cup cheddar cheese, shredded
Salt and pepper to taste
Optional: Cilantro, diced avocado, and tortilla strips for garnish


Instructions

In a large pot or Dutch oven, melt the butter over medium heat.
Add the onion and jalapeno; sauté until softened, about 5 minutes.
Stir in the garlic and tomato paste, cooking for another minute until fragrant.
Pour in the chicken broth, corn, Rotel tomatoes with chilies, and black beans.
Bring the mixture to a simmer and let cook for 15 minutes to meld the flavors.
Stir in the shredded chicken and softened cream cheese until the cheese is completely melted and the soup is creamy.
Gradually stir in the shredded cheddar cheese until smooth.
Season with salt and pepper to taste.

Notes

Use leftover rotisserie chicken to save time. For a milder soup, ensure the jalapeno seeds are completely removed before dicing. Store leftovers in an airtight container for up to 3 days in the refrigerator.
