Description

A vibrant, fusion-inspired vegetable soup that brings together the natural sweetness of roasted butternut squash and the heartiness of protein-rich chickpeas. Enhanced with aromatic spices like turmeric, garam masala, and ginger, this velvety, dairy-free soup is finished with creamy coconut milk. It is a one-pot nutritional powerhouse that is perfect for a comforting, wholesome dinner that satisfies the whole family.

Ingredients

Scale

1 tablespoon vegetable oil
1 medium yellow onion, finely chopped
3 cloves garlic, minced
2 teaspoons grated fresh ginger
1 tablespoon curry powder
2 teaspoons garam masala
1 teaspoon turmeric
1 medium butternut squash, peeled, seeded, and cubed
1 can (15 oz) chickpeas, drained and rinsed
4 cups vegetable broth
1 can (14 oz) coconut milk
1 cup diced tomatoes
Salt and black pepper to taste
Fresh cilantro for garnish

Instructions

Heat the vegetable oil in a large pot over medium heat.
Add the onion and sauté until translucent.
Stir in the garlic and ginger, cooking until fragrant.
Add the curry powder, garam masala, and turmeric to the pot, stirring constantly for one minute to toast the spices.
Add the cubed butternut squash, chickpeas, and diced tomatoes, stirring to coat with the spices.
Pour in the vegetable broth and bring to a boil, then reduce heat and simmer until the squash is tender, about 20 minutes.
Use an immersion blender to partially puree the soup for a velvety texture while leaving some chunks for heartiness.
Stir in the coconut milk and simmer for an additional 5 minutes.
Season with salt and pepper to taste and serve warm with fresh cilantro garnish.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. You can also freeze this soup for up to 3 months. For an extra kick, add a pinch of red chili flakes when toasting the spices.
