Ingredients
3/4 lb ground beef
3/4 lb ground turkey
3/4 cup panko breadcrumbs
3/4 cup grated parmesan cheese
1/2 cup grated onion, squeezed dry
1/2 cup fresh parsley, chopped
2 cloves garlic, minced
1 large egg
1 tsp salt
1/2 tsp black pepper
8 cups beef stock (no alcohol added)
28 oz crushed tomatoes
2 carrots, diced
2 celery stalks, diced
1 onion, chopped
2 cups ditalini pasta
Instructions
Preheat your oven to 400°F (200°C).
In a bowl, mix ground beef, turkey, panko, parmesan, grated onion, parsley, garlic, egg, salt, and pepper until combined.
Form the mixture into small meatballs and place them on a parchment-lined baking sheet.
Bake for 15-20 minutes until browned and set.
Place the meatballs into the slow cooker along with beef stock, crushed tomatoes, carrots, celery, and chopped onion.
Cover and cook on low for 6 hours.
Add the ditalini pasta to the slow cooker during the last 30 minutes of cooking.
Serve hot with extra parmesan and parsley.
Notes
Ensure you squeeze the grated onion to remove excess moisture for better meatball binding. You can use any small pasta shape like shells if ditalini is unavailable. Store leftovers in an airtight container for up to 3 days in the refrigerator.
