Description

This Crockpot Lasagna Soup is a cozy, family-friendly favorite that captures all the classic flavors of lasagna in a rich, comforting soup. Easy to prep and perfect for slow cooking, it’s a weeknight dinner winner.


Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 4 cups beef broth
  • 1 can (15 oz) crushed tomatoes
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

1. Brown the ground beef in a skillet and drain the fat. Transfer it to the Crockpot.

2. Add onion, broth, crushed tomatoes, garlic powder, Italian seasoning, salt, and pepper.

3. Cook on low for 6–7 hours or high for 3–4 hours.

4. Stir in the lasagna noodles and cook for another 20–30 minutes until the noodles are tender.

5. Serve topped with a dollop of ricotta cheese, shredded mozzarella, and fresh basil.

Notes

You can add spinach or zucchini for extra veggies.

Swap ground beef with Italian sausage or ground turkey if desired.

This soup pairs well with garlic bread or cornbread for a complete meal.

To save time, brown the beef and prep the ingredients the night before and refrigerate until ready to start the slow cooker.
