Ingredients
1 lb beef meatballs (homemade or store-bought halal)
4 ribs celery, chopped
3 medium carrots, chopped
1 medium yellow onion, diced
2 cloves garlic, minced
1 can (28 oz) diced tomatoes
6 cups beef broth
1 tablespoon Italian seasoning
1 cup small shell pasta
1 cup fresh spinach
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Place the chopped celery, carrots, onion, and garlic into the slow cooker.
Add the beef meatballs on top of the vegetables.
Pour in the diced tomatoes (with juices) and the beef broth.
Sprinkle with Italian seasoning, salt, and pepper.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
About 30 minutes before serving, stir in the dry pasta.
Stir in the fresh spinach just before serving until wilted.
Ladle into bowls and garnish with fresh parsley.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Pasta can absorb liquid over time, so you may need to add a splash of broth when reheating.
