Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 (14 oz) can of coconut milk
- 1 cup chicken broth
- 2 tablespoons curry powder
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, minced
- 1 medium onion, finely chopped
- 1 red bell pepper, sliced
- 1 cup carrots, sliced
- 1 tablespoon lime juice
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- Salt and pepper to taste
- 1 cup frozen peas
- Fresh cilantro for garnish, chopped
- Cooked rice for serving
Instructions
1. Prepare the chicken by cutting it into bite-sized pieces and place it in the crockpot.
2. Pour the coconut milk and chicken broth over the chicken pieces.
3. Add the curry powder, minced garlic, and ginger to the crockpot, stirring to combine with the liquid and chicken.
4. Add the chopped onion, red bell pepper, and carrots to the mixture.
5. Stir in lime juice, fish sauce, brown sugar, and season with salt and pepper to taste.
6. Place the lid on the crockpot and cook on low for 6–8 hours, or on high for 3–4 hours, until the chicken is tender and cooked through.
7. About 30 minutes before the cooking time is up, stir in the frozen peas.
8. Once cooked, adjust seasoning if necessary. Serve the coconut curry chicken over cooked rice and garnish with fresh cilantro.
