Description

A simple & delicious crockpot chicken soup! This chicken avocado lime soup is brimming with flavorful chicken, fresh Mexican herbs & spices & zesty lime juice! Top it with crispy tortilla strips for a healthy meal the whole family will love!


Ingredients

Scale
  • 3 boneless skinless chicken breasts
  • 2 (32 oz.) cartons of chicken broth
  • 1½ cup green onion, sliced (green & white parts)
  • 4 roma tomatoes, diced
  • 3 garlic cloves, minced
  • 2 jalapeños, deseeded & minced
  • 1 tsp cumin
  • ⅓ cup fresh lime juice
  • ⅓ cup cilantro, chopped
  • Salt & black pepper, to taste
  • 34 large avocados, diced (for serving)
  • Toppings:
  • Tortilla strips
  • Chopped cilantro
  • Lime wedges
  • Sliced green onion

Instructions

1. Place the chicken breasts in the bottom of a crockpot and generously season with salt and black pepper.

2. Add the chicken broth, sliced green onion, tomatoes, garlic, jalapeño, and cumin.

3. Cover the crockpot and cook on low for 5-7 hours.

4. Once done, remove the chicken breasts from the pot and shred them using two large forks.

5. Return the shredded chicken to the crockpot and stir.

6. Right before serving, add the lime juice and chopped cilantro to the soup and stir to combine.

7. Serve each individual bowl with diced avocado, tortilla strips, and additional chopped cilantro or toppings as desired.

Notes

You can substitute the raw chicken breasts with 3–4 cups of pre-cooked shredded chicken for a quicker option.

For added flavor, lightly sauté the garlic and jalapeños before adding to the crockpot.

This soup is naturally gluten-free and can be made dairy-free by omitting cheese-based toppings.
