Description

This Crockpot Chicken & Stuffing Casserole is a 4-ingredient comfort meal. Tender chicken, creamy savory sauce, and fluffy stuffing cook together for an easy “Thanksgiving in a bowl” dinner.


Ingredients

  • 1.5 lbs boneless skinless chicken breasts (cut into chunks or whole)
  • 1 box (6 oz) stuffing mix (Chicken or Herb flavor)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream (or plain Greek yogurt)
  • 1/4 cup chicken broth, low sodium
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1.5 cups fresh or frozen green beans (optional)
  • Fresh parsley for garnish

Instructions

1. Spray a 6-quart slow cooker with non-stick spray or use a liner.

2. Place chicken breasts at the bottom of the pot. Season with garlic powder, onion powder, and pepper.

3. In a medium bowl, whisk together the cream of chicken soup and sour cream until smooth.

4. Pour the soup mixture evenly over the chicken. Spread with a spatula to cover.

5. (Optional) Layer green beans or other veggies on top of the soup layer.

6. In a small bowl, lightly toss the dry stuffing mix with the 1/4 cup chicken broth just to moisten it slightly.

7. Sprinkle the stuffing mixture evenly over the top of the casserole.

8. Cover and cook on LOW for 4 hours or HIGH for 2-3 hours. (Check that chicken reaches 165°F).

9. Serve warm, ensuring you scoop down to the bottom to get chicken, sauce, and stuffing in each bite.

Notes

Don’t overcook! Chicken breast dries out after 4 hours.

If the stuffing looks dry near the end, drizzle a tablespoon of extra broth on top.

For a crispy top, transfer the insert to the oven and broil for 2 minutes before serving.

Use low-sodium ingredients to control the saltiness of the dish.
