Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts
- 3 cups fresh broccoli florets
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese
- 2 cups cooked white or brown rice (for serving)
Instructions
1. Place the chicken breasts in the bottom of a greased crockpot.
2. In a medium bowl, whisk together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper. Pour the mixture over the chicken.
3. Cover and cook on low for 4–5 hours or on high for 2–3 hours until the chicken is tender.
4. Shred the chicken, then stir in the broccoli and 1 cup of cheddar cheese. Cook for another 20–30 minutes until the broccoli is tender.
5. Sprinkle the remaining cheese on top and let it melt. Serve warm over cooked rice.
Notes
For extra flavor, stir in a splash of hot sauce or a pinch of paprika. To save time, use pre-cooked or frozen rice. This dish also works well with cauliflower rice for a lower-carb option.
