Ingredients
2 boneless skinless chicken breasts
1 onion, chopped
1 (15 oz) can diced tomatoes
1 red bell pepper, chopped
4 carrots, peeled and diced
2 tablespoons Italian seasoning
1 teaspoon garlic salt
1 bay leaf
1 teaspoon salt
1/2 teaspoon pepper
8 cups chicken broth
16 oz rotini pasta
1 cup shredded Parmesan cheese (for topping)
Instructions
1. Place chicken breasts, onion, diced tomatoes, bell pepper, carrots, Italian seasoning, garlic salt, bay leaf, salt, pepper, and chicken broth into a 6-quart crock pot.
2. Cover and cook on low for 8–10 hours or on high for 4–5 hours.
3. Remove the chicken, shred it with two forks, and return it to the crock pot.
4. Stir in uncooked rotini pasta. Cover and cook on high for 20–30 minutes until pasta is tender.
5. Remove bay leaf, stir, and serve hot.
6. Top each serving with shredded Parmesan cheese before serving.
Notes
For best flavor, cook on low for 8–10 hours to let the ingredients fully develop.
You can substitute rotini with any short pasta, or use gluten-free pasta if desired.
This soup reheats well; store in the fridge for up to 3 days. Add a splash of broth or water if it thickens too much.
