Ingredients
1 pound ground beef
1 cup chopped yellow onion
1/2 cup chopped sweet bell pepper
3–4 medium red potatoes, scrubbed and cut into bite-sized pieces
1 1/2 cups corn
1 can (14.5 ounces) kidney beans, rinsed and drained
1 can (10 ounces) diced tomatoes with green chilies, undrained
1 can (14.5 ounces) diced tomatoes, undrained
1/2 teaspoon black pepper
1/2 teaspoon salt
2 teaspoons minced garlic
Instructions
Heat a large skillet over medium-high heat and brown the ground beef with the chopped onion and bell pepper until the meat is cooked through and vegetables are softened.
Drain any excess fat from the skillet.
Transfer the cooked meat and vegetable mixture into the slow cooker.
Add the cut red potatoes, corn, kidney beans, diced tomatoes with green chilies, and the standard diced tomatoes to the slow cooker.
Stir in the minced garlic, salt, and black pepper.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are fork-tender.
