Ingredients
250g halloumi cheese (8.8 oz), cut into ½-inch slices
2 cups romaine lettuce or mixed greens
1 English cucumber, diced
1 cup cherry tomatoes, halved
1 small red onion, thinly sliced
½ red bell pepper, sliced
½ cup pitted Kalamata olives
¼ cup crumbled feta cheese
2 tablespoons red wine vinegar
2 tablespoons olive oil
Instructions
Heat a non-stick pan on medium heat. Add halloumi slices and cook 2-3 minutes per side until golden.
While cooking, blanch romaine in ice water for crispness; pat dry.
In a large bowl, toss romaine, cucumber, cherry tomatoes, red onion, bell pepper, and olives with 1 tablespoon olive oil and red wine vinegar.
Top with fried halloumi and feta. Season lightly with salt and pepper if desired.
Notes
Use Cypriot or Greek halloumi for best results. Rinse brine off halloumi to reduce saltiness if needed. Serve with crusty bread on the side. For vegan option: omit feta and use vegan dressing with 1 tsp lemon juice + 1 tsp olive oil.
