Description

These Crispy Chicken Taquitos are golden, crunchy, and packed with creamy, seasoned shredded chicken. Oven-baked or air-fried for a healthier option, they make a delicious snack, appetizer, or quick weeknight meal.


Ingredients

  • 2 cups cooked shredded chicken (rotisserie works great)
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup salsa (mild or spicy)
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • Salt and black pepper to taste
  • 8 small flour or corn tortillas
  • Cooking spray or oil (for brushing)
  • Optional toppings:
  • Chopped cilantro
  • Sour cream
  • Guacamole
  • Extra shredded cheese

Instructions

1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.

2. In a large bowl, mix shredded chicken, cream cheese, shredded cheese, salsa, garlic powder, chili powder, cumin, salt, and pepper until well combined.

3. Warm tortillas in the microwave for about 20 seconds to make them more pliable.

4. Spoon 2–3 tablespoons of the chicken mixture onto one side of each tortilla and roll tightly.

5. Place rolled taquitos seam-side down on the prepared baking sheet.

6. Lightly brush the tops with oil or spray with cooking spray.

7. Bake for 15–20 minutes until golden and crispy. For extra crispiness, broil for 1–2 minutes at the end.

8. Serve warm with sour cream, guacamole, or desired toppings.

Notes

Corn tortillas can be used for a gluten-free option—warm them thoroughly to prevent cracking.

Add diced jalapeños or a splash of hot sauce for a spicy version.

Freeze unbaked taquitos for easy meals—bake from frozen as needed.

Air fryer method: Cook at 400°F for 8–10 minutes, flipping halfway through for even crisping.
