Description

This creamy taco soup is a warm, comforting bowl of goodness that brings all your favorite taco flavors into a rich and velvety soup. Made with lean ground turkey, zesty tomatoes, hearty beans, and a blend of savory spices, it offers a luxurious texture that is perfect for chilly evenings. It is an easy, family-friendly recipe that relies on pantry staples, making it an ideal choice for busy weeknights when you want something satisfying, hearty, and simple to prepare.

Ingredients

Scale

1 lb ground turkey (93% lean)
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes with green chilies
2 cups chicken broth
1/2 cup heavy cream
1/2 cup sour cream
Salt and pepper to taste
Optional toppings: shredded cheddar, cilantro, avocado, tortilla strips

Instructions

Heat olive oil in a large pot or Dutch oven over medium-high heat.
Add the ground turkey and cook until browned, breaking it up with a spoon.
Add the diced onion and garlic, sautéing until the onion is translucent.
Stir in the taco seasoning to coat the turkey mixture thoroughly.
Pour in the diced tomatoes, black beans, and chicken broth.
Bring the soup to a gentle simmer, then reduce heat and cook for 15 minutes.
Lower the heat to low and stir in the heavy cream and sour cream until well combined.
Season with salt and pepper to taste.
Serve warm, topped with your favorite taco garnishes.

Notes

Leftovers taste even better the next day as the flavors continue to meld. Store in an airtight container in the refrigerator for up to 4 days. You can also freeze portions for up to 3 months; add the cream only after reheating to prevent separation.
