Perfect for busy weeknights, it is a balanced, family-friendly dinner that feels indulgent yet remains grounded in wholesome, simple ingredients.

Ingredients

Scale

1 lb ground beef (85% lean)
1 medium yellow onion, finely diced
2 cloves garlic, minced
15 oz canned black beans, drained and rinsed
15 oz canned corn, drained
15 oz canned crushed tomatoes
32 oz beef broth (halal certified)
2 tbsp taco seasoning
1/2 cup heavy cream
1/2 cup sour cream
2 tbsp fresh lime juice
1/4 cup fresh cilantro, chopped
Salt and black pepper to taste

Instructions

Brown the ground beef in a large pot over medium-high heat until fully cooked; drain excess fat.
Add the diced onion and garlic to the pot, sautéing until softened and fragrant.
Stir in the taco seasoning, ensuring the meat and vegetables are well coated.
Pour in the crushed tomatoes, beef broth, black beans, and corn; stir to combine.
Bring the soup to a gentle simmer, then reduce heat to low and cover for 20 minutes.
While the soup simmers, whisk together the sour cream, lime juice, and a pinch of salt in a small bowl to make the lime crema.
Remove the pot from heat and stir in the heavy cream.
Serve in bowls topped with a dollop of lime crema and a generous sprinkle of fresh cilantro.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove. For added texture, serve with crushed tortilla chips or shredded cheddar cheese.
