Description

A rich, comforting Tex-Mex inspired soup combining seasoned ground beef, vegetables, and a creamy broth. Perfect for weeknight meals, this versatile dish is customizable with toppings like shredded cheese and diced tomatoes. Quick to prepare and hearty, it delivers the flavors of tacos in a satisfying bowlful.

Ingredients

Scale

1 lb ground beef (optional substitute: ground turkey or firm tofu, cubed)
1 medium onion, diced
2 cloves garlic, minced
1 (14.5 oz) can low-sodium beef broth (use vegetable broth for vegetarian)
1 (10 oz) can diced tomatoes
1 cup frozen corn
1 cup black beans, drained and rinsed
1 tbsp taco seasoning (pork-free)
1 cup milk or half-and-half
Shredded cheese (Monterey Jack or cheddar)
Cilantro (fresh), sliced avocado, or tortilla chips for topping
Cooking oil (optional)
Water (optional, for adjusting consistency)

Instructions

Heat oil in a large pot over medium heat. Brown the ground beef, breaking it into small pieces.
Add onion and garlic; cook until softened (3-4 minutes).
Stir in broccoli, diced tomatoes, corn, black beans, and taco seasoning. Mix well.
Pour in beef broth and bring to a boil. Reduce heat and simmer for 15-20 minutes.
Blend part of the soup mixture (optional) for a thicker consistency. Stir in milk or half-and-half.
Serve hot with shredded cheese, cilantro, or avocado. Add toppings like tortilla chips before serving.

Notes

Use a homemade pork-free taco seasoning blend (e.g., chili powder, cumin, paprika, cayenne, oregano) if preferred.
Storage: Refrigerate leftovers in an airtight container for up to 3 days.
Customize spice level by adjusting cayenne or adding jalapeños.
Add frozen broccoli for a heartier, vegetable-rich version.
