Description

This Roasted Garlic Potato Soup is ultra creamy, deeply flavorful, and completely vegan. Made with roasted garlic, potatoes, and broth, it’s a cozy and comforting meal perfect for cold days.


Ingredients

Scale

Soup:

1214 cloves (60-70g) garlic, peeled

60 g (1/4 cup) olive oil

Sea salt

500 g (1.1 lb) potatoes, raw, peeled

Water

250350 ml (1 cup+) vegetable broth

60 ml (1/4 cup) soy or oat cream

3 tbsp nutritional yeast

1 tsp onion powder (optional)

Black pepper

Croutons (optional):

24 slices old bread (at least 1 day old)

Olive oil (you can use the garlic oil from roasting the garlic)

Black pepper


Instructions

1. Preheat the oven to 200°C (400°F). Add peeled garlic cloves to a small baking dish, drizzle with olive oil, and sprinkle with sea salt. Roast for 15-20 minutes until golden and soft. Let cool slightly.

2. Meanwhile, cube the potatoes and boil in salted water over medium heat until tender. Drain after cooking.

3. Add boiled potatoes, roasted garlic (without the oil), vegetable broth, soy cream, nutritional yeast, and onion powder to a blender. Season with black pepper and blend until smooth.

4. Adjust the consistency by adding more broth if needed. Season to taste with additional salt and pepper, then blend again.

5. For croutons, preheat the oven to 180°C (350°F) and line a tray with parchment paper or foil. Cut bread into cubes and place on the tray.

6. Toss bread cubes with olive oil and black pepper, then bake for about 10 minutes until golden and crispy.

7. Serve the soup warm with a drizzle of soy cream or garlic oil and crispy bread croutons.

Notes

Use more or less vegetable broth depending on your desired soup thickness.

Soy or oat cream can be substituted with coconut milk, plant-based milk, or extra broth.

Leftover garlic oil can be used for drizzling, cooking, or in salad dressings.
