4 boneless, skinless chicken breasts
2 ripe peaches, sliced
3 tablespoons Dijon mustard
2 tablespoons honey
1 cup heavy cream
2 tablespoons unsalted butter
1 small onion, diced
3 cloves garlic, minced
1 teaspoon fresh thyme, chopped
Salt, to taste
Black pepper, to taste
1 tablespoon cornstarch
2 tablespoons water
1 tablespoon lemon juice
Fresh chives or parsley, chopped (for garnish)


Instructions

Season chicken breasts with salt and pepper
Heat butter in a skillet over medium heat and sear chicken until golden brown and cooked through (6-8 minutes per side)
Remove chicken and set aside
In the same skillet, cook onions and garlic until softened (3-4 minutes)
Add peaches, Dijon mustard, honey, thyme, and lemon juice; simmer 5 minutes
Mix cornstarch and water in a small bowl, then stir into the peach mixture
Pour heavy cream into the skillet and simmer sauce until thickened (5-7 minutes)
Return chicken to the pan and let it absorb the sauce for 5 minutes
Garnish with chives or parsley and serve warm

Notes

Use canned peaches in syrup if out of season
Adjust honey to suit desired sweetness level
