Ingredients
4 boneless chicken breasts
8 oz fettuccine pasta
2 lemons (zest and juice)
3 garlic cloves
1/4 cup unsalted butter
1 cup heavy cream
1 cup grated Parmesan cheese
Dried parsley (1 tsp)
Salt and pepper to taste
2 tbsp olive oil
Instructions
Preheat oven to 350°F (180°C)
Season chicken breasts with salt, pepper, and parsley. Sauté in olive oil in a pan until browned
Transfer chicken to oven and bake for 15 minutes
Meanwhile, cook fettuccine pasta according to package instructions
In the same pan, melt butter, add garlic, lemon zest, and half the lemon juice; sauté for 5 minutes
Mix in heavy cream and Parmesan cheese until the sauce thickens
Combine cooked pasta with the sauce and chicken, stir gently
Top with remaining lemon juice and additional Parmesan
Notes
Use vegetable broth to deglaze the pan if desired
Substitute chicken thighs for a richer flavor
