Ingredients
4 bone-in, skin-on chicken thighs
1 tablespoon olive oil
5 garlic cloves, minced
1 cup cremini or button mushrooms, sliced
1 cup chicken broth
1/2 cup heavy cream or full-fat coconut milk
1 teaspoon dried thyme or fresh thyme leaves
1 tablespoon all-purpose flour
Salt and black pepper to taste
Fresh parsley or chives for garnish (optional)
Instructions
Preheat oven to 375°F (190°C)
Season chicken thighs with salt and black pepper
Heat olive oil in an oven-safe skillet over medium-high heat
Sear chicken thighs skin-side down until golden brown, about 5 minutes per side
Remove chicken from skillet and set aside
Add garlic to the same skillet and sauté for 1-2 minutes until fragrant
Add mushrooms and cook until softened, about 5 minutes
Sprinkle flour over the mushroom mixture and stir to coat
Slowly pour in chicken broth, stirring constantly to avoid lumps
Bring to a simmer and cook for 5 minutes
Stir in heavy cream and thyme, then return the chicken thighs to the skillet
Transfer to the oven and bake for 25 minutes or until the chicken is fully cooked
Remove from oven, adjust seasoning if needed, and garnish with fresh parsley or chives
Notes
For a richer flavor, you can use a mix of mushrooms like shiitake or portobello.
If not using an oven-safe skillet, transfer the sauce to an oven dish and bake the chicken separately.
