Description

A vibrant, refreshing, and entirely raw soup that is perfect for hot summer days. This creamy blend achieves its luxurious texture from ripe avocados and its cool, crisp flavor from fresh cucumbers. With a hint of zingy lemon and a subtle kick of jalapeno, it is a nutritional powerhouse that requires zero cooking time, allowing you to stay cool while enjoying a gourmet, garden-fresh meal in minutes.

Ingredients

Scale

1 large cucumber, peeled and cut into chunks
1 ripe avocado, pitted and scooped
1 jalapeno, trimmed and deseeded
0.5 lemon, juiced
3 tablespoons fresh cilantro
0.5 teaspoon sea salt
0.5 cup water or vegetable broth for blending

Instructions

Place the cucumber chunks, avocado, and jalapeno into a high-speed blender.
Add the lemon juice, fresh cilantro, and sea salt.
Pour in the water or vegetable broth to assist with the blending process.
Blend on high until the mixture is completely smooth and creamy.
Taste and adjust seasoning or add more liquid if a thinner consistency is desired.
Transfer to the refrigerator and chill for at least 30 minutes before serving.

Notes

Chill the serving bowls in the freezer for 10 minutes before serving to keep the soup cold longer.
Store in an airtight container in the refrigerator for up to 24 hours; stir well before serving as separation is natural.
