Ingredients
- 2 cups cooked and shredded chicken
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 1 (14.5 oz) can diced tomatoes
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- 1 cup heavy cream
- 1 cup shredded Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
1. Heat olive oil in a large soup pot over medium heat.
2. Sauté diced onion and minced garlic for 3-4 minutes until fragrant.
3. Stir in diced tomatoes and Italian seasoning; let simmer for 3 minutes.
4. Add chicken broth and bring to a gentle boil. Reduce heat and simmer for 10 minutes.
5. Add shredded chicken and cook for another 5 minutes.
6. Stir in heavy cream and simmer until heated through.
7. Gradually add Parmesan cheese, stirring until melted and smooth.
8. Season with salt and pepper. Serve hot topped with parsley and extra cheese.
Notes
For extra richness, use rotisserie chicken and freshly grated Parmesan.
Add cooked pasta or rice for a more filling meal.
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat gently on the stovetop, stirring often to prevent the cream from separating.
