Description

Creamy Gnocchi Chicken Soup is a rich and hearty meal made with tender chicken, pillowy gnocchi, fresh vegetables, and a creamy broth. It’s perfect for chilly nights and packed with comforting flavor.


Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 yellow onion, chopped
  • 6 carrots, chopped
  • 4 celery stalks, chopped
  • 2 tablespoons salted butter
  • 2 tablespoons all-purpose flour
  • 3/4 pound boneless skinless chicken breasts or thighs
  • 24 cloves garlic, chopped
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika or smoked paprika
  • 2 tablespoons fresh thyme leaves (or 2 teaspoons dried)
  • 1 pinch chili flakes
  • 1 pinch each kosher salt and black pepper
  • 46 cups low sodium vegetable broth
  • 1/2 cup chopped sun-dried tomatoes
  • 46 cups baby spinach
  • 1 1/2 cups canned coconut milk, heavy cream, or whole milk
  • 1/2 cup grated parmesan
  • 1 pound fresh potato gnocchi

Instructions

1. In a large soup pot set over medium heat, combine the olive oil and onion. Cook for 5 minutes until fragrant. Add the carrots and celery and cook another 3 minutes.

2. Stir in the butter and flour and cook for 1 minute to form a roux.

3. Add the chicken, garlic, Italian seasoning, paprika, thyme, chili flakes, salt, and pepper. Toss to coat everything in the spices.

4. Pour in 4 cups of broth and bring to a simmer over medium heat. Cook for 20 minutes, or until the chicken is fully cooked.

5. Remove the chicken from the pot and shred using two forks. Return the shredded chicken to the soup.

6. Stir in the spinach, sun-dried tomatoes, coconut milk (or cream or milk), parmesan, and gnocchi. Cook for about 5 minutes until the gnocchi is tender and the soup is heated through.

7. If the soup is too thick, add additional broth to reach your desired consistency.

8. Serve hot, topped with extra parmesan and a side of crusty bread if desired.

Notes

To make your own Italian seasoning, combine 2 tablespoons dried basil, 2 tablespoons dried oregano, 2 teaspoons dried thyme, 1 teaspoon dried rosemary, and 1 teaspoon dried sage. Store in a sealed container.

You can use either chicken breasts or thighs based on your preference.

For a dairy-free version, use coconut milk instead of cream or milk and skip the parmesan.
