  • 4 skinless, boneless chicken thighs
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 3 tablespoons Dijon mustard
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tablespoon chopped fresh parsley (for garnish)
  • Salt and pepper to taste

Instructions

1. Season the chicken thighs with salt and pepper.

2. In a large skillet over medium-high heat, add the olive oil. Once hot, add the chicken thighs and sear for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

3. In the same skillet, add the butter. Once melted, add the chopped onion and cook for about 3 minutes, until softened.

4. Stir in the minced garlic and cook for an additional minute, being careful not to let it burn.

5. Add the brown sugar and Dijon mustard, mixing well with the onion and garlic. Allow the mixture to simmer for a minute.

6. Pour in the chicken broth and stir to combine, then simmer until the sauce slightly thickens, about 5 minutes.

7. Lower the heat and stir in the heavy cream. Mix until fully combined.

8. Return the chicken thighs to the skillet and spoon some sauce over each piece. Cover the skillet and let the chicken simmer in the sauce for about 15 minutes, or until fully cooked through.

9. Taste the sauce and adjust with extra salt and pepper if needed.

10. Once done, garnish the dish with chopped fresh parsley before serving.
