Description
A hearty TexMex-inspired pasta salad with tender pasta, seasoned ground beef, crisped peppers, and a zesty southwest BBQ dressing. Perfect for gatherings, potlucks, or a satisfying weeknight meal.
Ingredients
12 oz elbow pasta
1 lb ground beef (halal-certified)
2 cups red bell pepper strips
1 cup black beans (drained)
1/2 cup green chiles (canned)
1 jalapeño (deseeded and sliced)
1/2 cup cilantro (chopped)
2 tbsp cooking oil
Salt and pepper
Dressing:
1/2 cup mayonnaise
1/4 cup light sour cream
2 tbsp southwest barbecue sauce
1 tbsp lime juice
1 tsp chili powder
1/2 tsp cumin
1 clove garlic (minced)
Instructions
Cook pasta in salted boiling water until al dente. Drain and cool.
Heat oil in a skillet; cook beef with salt and pepper until browned. Transfer to a bowl.
In the same skillet, sauté bell peppers, black beans, green chiles, and jalapeños until tender.
Whisk dressing ingredients together until smooth.
Combine pasta, beef mixture, sautéed veggies, and cilantro. Toss with dressing until well coated.
Notes
Prep all components 1 day in advance; combine just before serving.
Use 92% lean turkey for a lighter version.
Halal-compliant if using halal beef/substitutes.
Chill leftovers in airtight containers up to 3 days.
