Ingredients
- 1 small to medium wheel of Brie cheese
- 1/2 cup dried cranberries (or fresh cranberries for compote)
- 1/2 cup chopped pecans, toasted
- 2 tablespoons honey or maple syrup
- 1 teaspoon fresh rosemary or thyme (optional)
- Optional:
- 1 sheet puff pastry (for wrapped version)
- 1 tablespoon sugar (if making fresh cranberry compote)
- Pinch of cinnamon or nutmeg (optional, for added spice)
Instructions
1. Lightly toast the chopped pecans in a dry skillet over medium heat for 3-5 minutes until fragrant and golden.
2. If using fresh cranberries, cook them with sugar in a small saucepan to make a compote. If using dried cranberries, have them ready.
3. Remove the brie from its packaging and optionally trim the top rind to allow the toppings to meld better with the cheese.
4. For the wrapped version, place the brie on a sheet of puff pastry and fold it over, sealing the edges.
5. Place the brie on a baking sheet lined with parchment paper.
6. Spread the cranberries or cranberry compote over the top of the brie.
7. Sprinkle with toasted pecans and drizzle with honey or maple syrup. Add rosemary or thyme if desired.
8. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes, or 25 minutes for the puff pastry version, until melted and bubbly.
9. Let rest for a few minutes before serving.
