Description

Chickpea Tomato Soup is a nourishing and flavorful dish that warms you from the inside out. This easy-to-make soup features hearty chickpeas paired with tangy fire-roasted tomatoes, aromatic spices, and fresh spinach. Perfect for busy weeknights or cozy gatherings, each spoonful offers a delightful blend of comfort and nutrition.

Ingredients

Scale
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 cups fresh spinach

Instructions

1. In a large pot over medium heat, heat olive oil. Add chopped onions and minced garlic; sauté until onions are translucent (about 5 minutes).

2. Stir in cumin and paprika; cook for 1 minute to release flavors.

3. Add canned diced tomatoes with juices; stir well.

4. Pour in vegetable broth and chickpeas; bring to a gentle boil, then reduce heat and simmer for 10 minutes.

5. Stir in fresh spinach until wilted, about 5 minutes before serving.

6. Serve hot, garnished with fresh herbs or a drizzle of olive oil if desired.

Notes

For extra depth of flavor, try adding a splash of lemon juice before serving.

This soup can be blended partially or fully for a creamier texture.

Pairs wonderfully with crusty bread or a side of quinoa.
