Description

Indulge in the perfect autumn comfort food with this butternut squash and chicken sausage pasta. Roasted until caramelized, the squash creates a smooth, velvety sauce that clings to every strand of pasta, while savory chicken sausage adds protein and depth. This dish highlights seasonal produce, relying on natural starches and roasted garlic for creaminess rather than heavy dairy. It is an elevated, wholesome, and budget-friendly meal that is easy enough for busy weeknights yet sophisticated enough for guests. A true celebration of cozy, earthy, fall flavors.

Ingredients

Scale

2 lb butternut squash, peeled and halved
1 head garlic, top sliced off
1 lb chicken sausage, sliced
12 oz pasta of choice
1 tablespoon olive oil
1 teaspoon fresh sage, chopped
Salt and black pepper to taste
Optional: red pepper flakes for heat

Instructions

Preheat your oven to 400°F (200°C).
Place the butternut squash halves and the head of garlic on a baking sheet, drizzle with olive oil, and roast until tender and golden, about 35-40 minutes.
While the squash roasts, brown the sliced chicken sausage in a pan until crispy and cooked through; set aside.
Boil a large pot of salted water and cook the pasta according to package directions, reserving 1 cup of pasta water before draining.
Scoop the roasted squash flesh into a bowl and squeeze in the roasted garlic cloves; mash or blend until smooth.
Combine the squash puree with the cooked pasta, adding reserved pasta water as needed to create a creamy sauce.
Fold in the browned chicken sausage and fresh sage.
Season with salt, pepper, and red pepper flakes if desired, then serve warm.

Notes

Ensure you save the pasta water, as it is essential for emulsifying the sauce. You can use a blender for a smoother sauce or a fork for a rustic texture. Store in an airtight container in the refrigerator for up to 3 days.
