Ingredients
1 medium sweet potato (about 1 cup cubed)
1 cup ground beef (halal-certified)
1/2 cup cottage cheese (creamy)
1/4 cup chopped fresh cilantro
1 tablespoon olive oil
1 teaspoon paprika
1/2 teaspoon cumin
Salt and pepper to taste
1/2 avocado, sliced
2 tablespoons hot honey (e.g., agave-based)
2 cups cooked brown rice (for serving)
Instructions
Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, paprika, and salt.
Spread on a baking sheet and roast for 25 minutes until tender.
Heat a skillet over medium heat; cook ground beef, breaking into small pieces, until browned and cooked through. Drain excess fat.
Mix cooked beef with cumin and a pinch of salt.
Arrange roasted sweet potatoes on a plate or bowl. Top with cooked beef.
Add a dollop of cottage cheese and fresh avocado slices.
Drizzle hot honey over the bowl. Garnish with cilantro and serve with rice.
Notes
Substitute ground beef with halal- or jhatayu-certified kebab meat or plant-based alternative if desired.
Use chipotle-lime honey for a smoky flavor twist.
