Ingredients
14 ounces extra firm tofu, pressed and cubed
1 teaspoon cornstarch
1 tablespoon oil (for tofu)
1 tablespoon soy sauce (for tofu)
2 tablespoons hoisin sauce
2 tablespoons oil (for sautéing)
8 ounces shiitake mushrooms, sliced
2 heads baby bok choy, chopped
3 cloves garlic, minced
1-inch piece fresh ginger, peeled and minced
1 tablespoon curry powder
6 cups vegetable broth
8 ounces ramen noodles, seasoning packets discarded
14-ounce can full-fat coconut milk
Fresh cilantro and chili oil for garnish
Instructions
Preheat your oven to 400°F (200°C).
Toss the cubed tofu with cornstarch, a drizzle of oil, and soy sauce on a parchment-lined baking sheet.
Bake the tofu for 20-25 minutes until golden and crispy, tossing halfway through.
While tofu bakes, heat oil in a large pot over medium heat.
Add the shiitake mushrooms and sauté until softened.
Stir in the garlic, ginger, and curry powder, cooking for 1 minute until fragrant.
Pour in the vegetable broth and bring to a gentle simmer.
Add the ramen noodles and cook according to package directions until tender.
Stir in the coconut milk and hoisin sauce, heating through without boiling.
Add the baby bok choy and cook for 2 minutes until wilted.
Ladle the soup into bowls and top with the crispy baked tofu.
Garnish with fresh cilantro and chili oil if desired.
Notes
If you prefer a thicker broth, stir an extra teaspoon of cornstarch into a splash of cold broth before adding it to the pot.
You can substitute the baby bok choy with baby spinach or kale if preferred.
Store leftovers in an airtight container in the refrigerator for up to 2 days, though noodles may soften.
