Description

Experience the comforting, savory essence of a traditional lasagna in a fraction of the time. This one-pot meal combines ground beef, aromatic garlic, and tender pasta in a rich, tomato-based broth, finished with a velvety swirl of cottage cheese. Perfect for busy weeknights, this deconstructed lasagna soup captures all the classic flavors without the tedious layering or cleanup, offering a hearty and soul-warming bowl that feels like a homemade hug on a cold day.

Ingredients

Scale

1 lb ground beef
1 small yellow onion, diced
3 cloves garlic, minced
1 tablespoon olive oil
28 oz crushed tomatoes
4 cups beef broth (halal certified)
1 tablespoon Italian seasoning
1/2 teaspoon red pepper flakes
8 oz lasagna noodles, broken into pieces
1 cup cottage cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil for garnish

Instructions

Heat olive oil in a large Dutch oven over medium-high heat.
Add the ground beef and diced onion, cooking until the beef is browned and the onions are translucent.
Stir in the minced garlic and cook for one minute until fragrant.
Pour in the crushed tomatoes, beef broth, Italian seasoning, and red pepper flakes.
Bring the mixture to a boil, then stir in the broken lasagna noodles.
Reduce the heat to medium-low and simmer for 10-12 minutes, or until the noodles are tender.
Stir in the cottage cheese until well incorporated and creamy.
Remove from heat and serve hot in bowls, topped with shredded mozzarella, Parmesan, and fresh basil.

Notes

Ensure your beef broth is certified halal to maintain the dietary standards. You can substitute cottage cheese with ricotta if you prefer a smoother texture. Store leftovers in an airtight container for up to 3 days; note that the pasta may absorb more broth over time, so add a splash of water when reheating.
