Ingredients
1 lb ground beef
1 medium yellow onion, diced
2 cloves garlic, minced
4 cups beef broth (low-sodium)
2 cups russet potatoes, peeled and cubed
1 cup heavy cream
2 cups sharp cheddar cheese, shredded
2 tbsp unsalted butter
1 tbsp Worcestershire sauce
1 tsp paprika
Salt and black pepper to taste
Instructions
Place a large pot over medium heat and melt the butter.
Add the diced onion and cook until softened, about 5 minutes.
Add the ground beef and cook until browned, breaking it up with a spoon; drain excess fat.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the potatoes, beef broth, Worcestershire sauce, and paprika.
Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
Stir in the heavy cream and bring to a gentle simmer.
Remove from heat and stir in the cheddar cheese until smooth and melted.
Season with salt and pepper to taste and serve warm.
Notes
Use freshly shredded cheese for a smoother melt. You can add finely diced carrots or celery during the onion sauté step to incorporate extra vegetables.
