Description

This Christmas Salmon with Pomegranate Glaze is a festive showstopper featuring tender Atlantic salmon glazed with a sweet-tangy reduction of pomegranate and orange. Garnished with bright herbs and fresh fruit, it’s a holiday dish that’s as stunning as it is delicious.


Ingredients

  • 2 lbs. whole Atlantic salmon
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 cups pomegranate juice
  • ¼ cup brown sugar
  • ¼ cup fresh squeezed orange juice
  • 1 tablespoon orange zest
  • Pomegranate seeds for garnish
  • Orange slices for garnish
  • Fresh parsley for garnish
  • Green onions for garnish

Instructions

1. Preheat oven to 300°F (150°C) and line a large baking sheet with parchment paper.

2. Place the salmon skin-side down on the baking sheet and season with salt and pepper.

3. In a saucepan over medium heat, combine pomegranate juice, brown sugar, orange juice, and orange zest. Bring to a boil, then reduce heat and simmer for 20–25 minutes, stirring occasionally, until the sauce thickens to a syrup-like consistency.

4. Brush the reduced pomegranate glaze over the salmon.

5. Place salmon in the oven and bake for 30–38 minutes, or until the internal temperature reaches 145°F (63°C).

6. Transfer the salmon to a serving platter and garnish with pomegranate seeds, orange slices, parsley, and sliced green onions.

Notes

Use fresh pomegranate juice for best flavor, or bottled juice with no added sugar.

To avoid overcooking, check the internal temperature early and watch for flaking.

This dish pairs beautifully with wild rice, roasted vegetables, or a citrusy salad.

Glaze can be prepared ahead of time and stored in the fridge for up to 3 days.
