Ingredients
1 lb flank steak
1 tbsp chipotle peppers in adobo sauce
2 tbsp lime juice
2 cloves garlic, minced
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp ground cinnamon
1 cup cooked rice (white or brown)
Mixed greens (lettuce, spinach)
1 avocado, sliced
1/2 cup diced tomatoes
1/4 cup diced red onion
Fresh cilantro, chopped
Optional toppings: vegan cheese, pico de gallo, sesame seeds
Instructions
Combine chipotle peppers, lime juice, garlic, paprika, cumin, cinnamon, salt, and pepper in a bowl. Marinate steak for 20 minutes.
Grill steak over high heat (4-5 minutes per side) until medium-rare. Let rest 5 minutes.
Cook rice according to package instructions.
