Ingredients
12 large shrimp, peeled and deveined
1 tsp chipotle powder (or 1/2 tsp smoked paprika)
1/2 tsp chili powder
1/4 tsp cumin
1 tbsp olive oil
1/4 cup fresh cilantro, chopped
2 tbsp lime juice
1 tbsp honey or maple syrup
1 tsp olive oil
4 cups mixed greens
1 cup cherry tomatoes, halved
1/2 avocado, sliced
1/4 cup red onion, thinly sliced
Salt and pepper to taste
Instructions
In a bowl, toss shrimp with chipotle powder, chili powder, cumin, and 2 tsp oil. Cook over medium heat for 2-3 minutes per side until pink and cooked through.
Whisk together cilantro, lime juice, honey/maple syrup, and 1 tsp oil for the vinaigrette.
In a large bowl, combine greens, tomatoes, onion, and avocado. Season with salt and pepper.
Add cooked shrimp to the salad. Drizzle with vinaigrette and toss to coat before serving.
Notes
Shrimp can be marinated for 15-30 minutes for deeper flavor
Avocado should be added just before serving for optimal texture
Vinaigrette can be made ahead and stored in an airtight container
Substitute spinach, arugula, or spring mix for the greens
