Ingredients
1 lb large shrimp (peeled and devein)
1 tablespoon olive oil
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon chipotle powder (or smoked chili)
1/2 teaspoon garlic powder
1 cup cooked white or jasmine rice
1 medium avocado, diced
1 medium mango, diced
1 lime, juiced
Fresh cilantro, chopped (optional)
Salt and pepper to taste
Instructions
Whisk together paprika, cumin, chipotle powder, and garlic powder. Rub onto shrimp and let marinate for 10 minutes.
Heat olive oil in a pan over medium heat. Sauté shrimp for 2-3 minutes per side until pink and tender.
Cook rice according to package instructions.
