Description
Tender grilled chicken with a smoky chipotle and lime marinade, served with a sweet, tropical mango salsa. A vibrant mix of smoky, zesty, and sweet flavors that’s ideal for weeknights or summer gatherings.
Ingredients
4 boneless, skinless chicken breasts
1/4 cup lime juice, freshly squeezed
1 chipotle pepper in adobo sauce, minced
1 tsp adobo sauce
1/4 cup chopped fresh cilantro
1 tbsp honey
1 tsp ground cumin
1/2 tsp salt, or to taste
1/2 tsp black pepper
1 medium mango, diced
1/4 red onion, finely chopped
1/4 red bell pepper, diced
1 tbsp lime juice
1 tbsp chopped fresh cilantro
1 jalapeño pepper, seeded and finely chopped (optional for heat)
Instructions
In a bowl, combine lime juice, chipotle pepper, adobo sauce, cilantro, honey, cumin, salt, and black pepper to make the marinade.
Add chicken breasts to the marinade and mix well to coat. Let marinate for at least 30 minutes, or up to 2 hours.
Preheat grill to medium-high heat.
Grill the chicken for 5–7 minutes per side, or until fully cooked (internal temperature of 165°F/75°C). Let rest for 5 minutes.
In a small bowl, mix together diced mango, red onion, red bell pepper, jalapeño (if using), lime juice, and chopped cilantro to make the salsa.
Serve grilled chicken topped or alongside the mango salsa.
Notes
For extra flavor, let the chicken marinate in the refrigerator overnight.
For a no-grill option, cook chicken in a skillet over medium heat until golden and cooked through.
Store leftovers in an airtight container in the fridge for up to 2 days. Refrigerate salsa separately for maximum freshness.
