Description

Ingredients

  • 2 cups rotisserie chicken breast, shredded
  • 1 head romaine lettuce, shredded
  • 1 head iceberg lettuce, shredded
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1/4 cup green onions, thinly sliced
  • 3 tablespoons cilantro leaves, roughly chopped (optional)
  • 1 pinch crushed red pepper flakes
  • 1 tablespoon sesame seeds
  • 1/2 cup slivered almonds
  • 1 cup crispy wonton strips

Instructions

1. Add shredded chicken to a large bowl. Pour half of the Asian dressing over the chicken and toss until all pieces are well coated. Let it sit for at least 10 minutes so the flavors can soak into the chicken.

2. Add romaine lettuce, iceberg lettuce, red cabbage, carrots, green onions, and cilantro to the bowl. Toss to combine.

3. When ready to serve, pour the remaining dressing over the salad and toss.

4. Garnish with red pepper flakes, sesame seeds, almonds, and crispy wonton strips. Serve and enjoy immediately while the salad and toppings are crisp.

Notes

More delicious add-ins: Mandarin orange slices, water chestnuts, baby corn, julienned orange or red bell pepper, snow peas, and sunflower seeds. Chow mein noodles can be used instead of crispy wonton strips.

To make this recipe faster: Use store-bought rotisserie chicken, pre-chopped Romaine, and pre-shredded carrots and cabbage.

Homemade Asian dressing tip: If storing longer than 2–3 days, add garlic and ginger just before serving to extend shelf life.

DIY Salad Kit: Store prepped ingredients in separate zip-top bags in the fridge. Chicken stays fresh up to 3 days; chopped lettuce up to 5 days; dressing 2–3 days or longer without fresh garlic/ginger.
