Ingredients

  • 4 cups pasta, cooked
  • 3 Italian chicken sausages
  • 1 cup tomatoes
  • 1 cup mozzarella balls, cut in half
  • 2 cups fresh basil
  • 1/4 cup pine nuts
  • 1 lemon, juiced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup grated parmesan
  • 2 garlic cloves
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • Optional: additional fresh basil and grated parmesan for topping

Instructions

1. Start by cooking your pasta according to package directions. Set aside.

2. Make homemade pesto by combining basil leaves, extra virgin olive oil, garlic cloves, lemon juice, grated parmesan cheese, pine nuts, salt, and pepper. Blend or process until smooth.

3. Cook the chicken sausage according to package instructions.

4. In a large bowl, combine the cooked pasta, tomatoes, mozzarella balls, and sliced chicken sausage.

5. Add the pesto on top and toss to mix everything together.

6. Serve with additional fresh basil and grated parmesan on top, if desired.

7. Enjoy!

Notes

Any pasta shape will work for this recipe.

Feel free to use any flavor of chicken sausage you like.

If using store-bought pesto, substitute with 1 cup.
