Description

This soul-warming Chicken and Wild Rice Soup is the ultimate comfort meal, featuring tender chicken breasts, earthy wild rice, and a medley of fresh vegetables in a silky, creamy broth. Perfect for chilly evenings, this approachable one-pot dish captures the essence of classic home cooking. It is hearty enough to feed the whole family and yields delicious leftovers, making it a reliable staple for your weeknight recipe rotation.

Ingredients

Scale

2 tablespoons butter
1 small white onion, finely diced
2 medium carrots, peeled and diced
2 celery stalks, thinly sliced
6 cloves garlic, minced
1/4 cup all-purpose flour
6 cups high-quality chicken stock
1 pound boneless, skinless chicken breasts
1 cup wild rice blend
8 ounces cremini mushrooms, sliced
1 teaspoon dried thyme
1 teaspoon fresh parsley, chopped
1 cup half-and-half
Salt and black pepper to taste

Instructions

In a large pot or Dutch oven, melt the butter over medium heat.
Add the onion, carrots, and celery, cooking until softened, about 5 minutes.
Add the garlic and mushrooms, sautéeing for 2-3 minutes until fragrant.
Stir in the flour and cook for 1 minute to remove the raw flour taste.
Slowly whisk in the chicken stock, ensuring no lumps remain.
Add the chicken breasts, wild rice blend, and thyme.
Bring to a boil, then reduce heat and simmer covered for 40-45 minutes until the rice is tender and chicken is cooked through.
Remove the chicken, shred it using two forks, and return it to the pot.
Stir in the half-and-half and fresh parsley.
Season with salt and pepper to taste and serve warm.

Notes

To verify the chicken is cooked, ensure internal temperature reaches 165°F. Store leftovers in an airtight container in the refrigerator for up to 3 days. The soup will thicken as it cools; add a splash of stock or water when reheating.
