This Cheesy Ground Beef & Potato Casserole is the ultimate comfort food—layers of tender potatoes, seasoned beef, and rich mushroom sauce, all baked with melty cheddar cheese until golden and bubbly.
Ingredients
- 1 pound ground beef
- 4 medium potatoes, thinly sliced
- 1 medium onion, chopped
- 2 cups shredded cheddar cheese
- 1 can (10.5 oz) cream of mushroom soup
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 tablespoon olive oil
- Chopped parsley for garnish (optional)
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large skillet over medium heat, add olive oil and cook the ground beef until browned. Add chopped onion and sauté until soft.
3. Stir in garlic powder, salt, pepper, and paprika. Cook for an additional 2 minutes.
4. Grease a 9×13-inch casserole dish.
5. Place half of the sliced potatoes at the bottom of the casserole dish.
6. Spread the cooked ground beef mixture evenly over the potato layer.
7. Layer the remaining potato slices on top of the beef.
8. In a bowl, combine the cream of mushroom soup and milk. Mix until smooth.
9. Pour the soup mixture over the layered potatoes and beef.
10. Top the casserole with shredded cheddar cheese.
11. Cover the dish with aluminum foil and bake for 45 minutes.
12. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
13. Let the casserole cool for about 5 minutes before serving.
Notes
Slice potatoes thinly to ensure they cook evenly.
You can substitute cream of mushroom soup with cream of chicken or homemade white sauce if preferred.
Add a pinch of red pepper flakes for a little heat.
To save time, use pre-shredded cheese and a mandoline to slice potatoes quickly.
Store leftovers in the fridge for up to 3 days; reheat in the oven or microwave.
