  • 1 lb ground beef
  • 1 tablespoon butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard (yellow or Dijon)
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Creamy Texture:

  • 1 cup heavy cream (or half-and-half)
  • 1 ½ cups cheddar cheese, shredded
  • ½ cup cream cheese, softened

Optional Add-Ins for More Flavor:

  • ½ cup diced tomatoes
  • ½ teaspoon red pepper flakes
  • 1 cup chopped mushrooms or bell peppers

Toppings (Optional):

  • Extra cheddar cheese, shredded

Instructions

1. In a large pot, melt butter over medium heat.

2. Add the ground beef and cook until browned, breaking it up with a spoon (about 5–7 minutes). Drain excess grease and set the beef aside.

3. In the same pot, add onions and garlic and sauté for 2–3 minutes until fragrant.

4. Stir in Worcestershire sauce, mustard, paprika, salt, and black pepper.

5. Pour in the beef broth and return the cooked beef to the pot. Simmer for 10 minutes, stirring occasionally.

6. Reduce the heat to low and stir in cream cheese until melted.

7. Slowly pour in heavy cream, stirring continuously.

8. Add cheddar cheese and stir until the soup is smooth and creamy.

9. Ladle the soup into bowls and top with extra cheese, Beef bits, or green onions. Serve hot.

Notes
