Description

Experience the ultimate comfort in a bowl with this creamy, velvety cheeseburger soup. Perfect for busy weeknights, this one-pot wonder combines savory ground beef, aromatic onions, and garlic with the iconic smoothness of Velveeta and zesty diced tomatoes with green chiles. It captures the nostalgic flavor of a backyard cookout without the need for a grill, delivering a hearty, satisfying meal that the whole family will love in under 30 minutes.

Ingredients

Scale

1 pound ground beef (85% lean)
1 medium onion, finely diced
2 cloves garlic, minced
20 ounces Rotel mild diced tomatoes with green chiles (two 10oz cans, undrained)
1 pound Velveeta cheese, cut into 1-inch cubes
Salt to taste
Black pepper to taste

Instructions

Place a large soup pot or Dutch oven over medium heat.
Add the ground beef, diced onion, and minced garlic to the pot.
Cook, stirring occasionally, until the beef is browned and the onions are softened, about 8-10 minutes.
Drain any excess grease if desired.
Stir in the two cans of Rotel diced tomatoes and green chiles with their liquid.
Reduce heat to low and add the cubed Velveeta cheese.
Stir consistently until the cheese has completely melted and the soup is smooth and creamy.
Season with salt and black pepper to taste and serve warm.

Notes

Add a splash of beef broth or water if you prefer a thinner soup consistency. You can stir in additional vegetables like shredded carrots or corn to boost nutrition. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently on the stovetop.
