  • 1 cup shredded cheddar cheese (or mixed varieties)
  • 1/2 cup shredded Parmesan cheese (or Pecorino Romano)

Instructions

1. Heat the oil in a large pot over medium-high heat.

2. Add ground beef and diced onion, cooking until browned, about 5–7 minutes.

3. Stir in minced garlic and sauté for an additional minute.

4. Sprinkle in flour, stirring constantly for 2–3 minutes.

5. Pour in chicken broth while stirring, bring to a simmer for 5 minutes.

6. Add heavy cream, seasonings, and mix well.

7. Incorporate matchstick carrots and macaroni noodles, boil for 1 minute.

8. Simmer on low for 20 minutes, stirring occasionally.

9. Add cheddar and parmesan cheese, stirring until melted.

Notes

Ground turkey or chicken can be used instead of beef.
